CyberParents' Hearty Corn/Falafel Stew Recipe

1/2 pkg. (one packet) Lipton Recipe Secrets--Onion
4 cups water
1/2 cup whole wheat couscous
2 cups frozen corn kernels
1/2 cup tomato sauce or diced tomatoes

1 cup water
1/2 cup Fantastic Falafel mix

Pepper, salt  to taste

As with all mixes, this is quite salty, so you probably will not need additional salt.

Other veggies can be added as you wish.

Lipton's Recipe Secrets is a onion soup product with   two packets of mix per package. Use one entire packet.

Mix dried onion soup powder, corn, couscous, tomato sauce, and 4 cups water. Simmer while preparing falafel.

Combine falafel mix and 1 cup water. Stir with fork 'til smooth, about 60 seconds. Add to stew.

Simmer about 10 minutes. Add water if too thick.

 

This very thick stew has a distinct middle Eastern flavor, an unusual texture, and a fair amount of protein power.

Good with pita bread spread with hummus. Hummus is available in a mix from Fantastic or other vendors.

Additional vegetables, such as zucchini, broccoli, green beans, etc. can be added to this mixture for vitamin power!
